Ok, I think I got it this time -- I pulled out FlexBuilder and did a bit of testing
Set the horizontalScrollPolicy and verticalScrollPolicy attributes to "off" for the canvas. You may have to add the maxHeight and maxWidth to the canvas as well, if your s*snip*

Do you have desktop effects on? Things like that tend to mess with certain games, although it's never certain whether turning them off will make the game run.
What 'flavor' is installed on the EEE? Ubuntu?
