This should be on some april-fools joke. "a centimeter isn't really a centimeter!"

But how do they know how large an inch is on the screen? And for that matter, why does anyone even care? I've never worried about how large it looks on-screen verses on paper.

That's the entire point of dots per inch mindstorm.
If they get rid of that, they get rid of any sort of reference point.

There used to be a little setting in the control panel, where a resizable ruler would pop up onscreen, and you could adjust it to be a proper per-inch size, then all the proggies would know what an inch was..
Haven't seen it for a long time, but I'm sure it's still in there somewhere. .. everything else is!
